Tomato Basil Sauce


- 20 plum tomatoes, blanched, peeled and seeded
- ½ cup carrot juice
- ¼ cup olive oil
- ½ cup fresh basil
- 10 cloves of garlic
- 4 shallots, minced
- ¼ cup fresh oregano
- cayenne pepper to taste


Puree all ingredients in a blender.
Transfer to a saucepan and cook slowly for 45 minutes.
Can be thickened with a little unsalted tomato paste.
