- 2 tsp salt
- 1 tsp freshly ground pepper
- 2 cloves garlic, crushed
- 1 tsp anchovy paste
- ¼ tsp dry mustard
- ½ tsp Worcestershire sauce
- 1 tbsp freshly grated parmesan cheese
- 2 tbsp red wine vinegar
- 2 tbsp fresh lemon juice
- ½ cup olive oil
- 1 egg yolk
- 1 large head romaine lettuce

Blend salt, pepper and garlic together. Mash in anchovy paste. Add mustard, Worcestershire sauce and cheese. Mix well. Beat in vinegar, lemon juice and oil. Add egg yolks and beat well. Add lettuce
and toss. Sprinkle with croutons and parmesan cheese.
