- 5¼ cups sifted flour
- 6 tsp baking powder
- 2 tsp salt
- 2 cups white sugar
- 8 egg whites
- 1 cup sugar
- 1 cup shortening
- 2 cups milk
- 1 ½ tsp orange extract
- 1 tsp almond extract
Beat egg whites until foamy (at high speed with an electric mixer). Then add 1 cup sugar, gradually, beating only until meringue will hold up in soft peaks.
In a large bowl, stir shortening, just to soften. In another bowl, sift flour, baking powder, salt and 2 cups sugar together.
Sift into shortening.
Add 1 ½ cups of milk and extracts and mix until all flour is dampened. Beat at 2 minutes on low.
Add remaining milk and the meringue mix. Beat for 1 minute.
Grease and flour bottom of pans, or line with parchment paper.
Bake at 325 degrees for about 45 minutes or until done. Cool. Makes 1-3 tiered wedding cake, or 15 small wedding cakes.
