soft pretzels

1 package yeast (active)
- 1 tbsp sugar
- 1 cup warm water
- 2 ½ - 3 cups all purpose flour
- 1 tsp salt
- 2 tbsp salad oil
- 1 egg white, beaten with 1 tsp
- salt and water

Dissolve yeast and sugar in water. Let stand 10 minutes. Add 2 cups flour, salt and oil, beat until smooth. Gradually stir in more flour to make dough soft (1/2 cup). Knead dough till soft and elastic add flour necessary.
Place dough in greased bowl, cover, let rise 45 minutes to 1 hour. Punch dough down and divide in 12 parts. Make pretzel shapes and place on greased pan. Let rise uncovered 20-25 minutes. Bake at 425 degrees until well brown, at least 12-15 minutes.
